Griffin was born in Anchorage, Alaska and played for the Nebraska Cornhuskers in college.
Finishing with averages of 16 points, eight rebounds and 1.4 steals while shooting at 56% from the field, Griffin went on to be selected by the Minnesota Lynx with their third pick in the 2010 WNBA draft before being drafted by the Connecticut Sun.
In her rookie season for the Sun, Griffin averaged 4.4 points and 4.7 rebounds and was able to earn a spot on the WNBA All Rookie Team.
She then headed to Hungary and played for Pécs 2010 in the Hungarian A-league where she led the team to a 23–1 record, which earned an entry in the championship series.
Coming to Australia in 2012, Griffin signed with the Bendigo Spirit in the WNBL.
Once cleared to play due to WNBA commitments, she made an instant impact for Bendigo, averaging 16.5 points and 8.6 rebounds per game and was instrumental in Bendigo's WNBL championship, claiming Grand Final MVP honours after scoring 20 points and collecting 11 rebounds.
Despite missing close to a third of the season, Griffin finished sixth overall in the WNBL's end of season league MVP voting and has since become a stalwart of the club, winning a string of club MVP awards.
Becoming a naturalised Australian citizen in November 2015, Griffin was then a consideration for the Opals at Rio but an injury kept her out of pre-tournament training.
Recovering quicker than expected, Griffin then made her Opals debut at the FIBA Women's Asia Cup, leading them to a silver medal while winning the tournament MVP with averages of 17.9 points, 9.1 rebounds, 1.1 assists, 1.3 steals and one block per game.
